Ultimate fall snack: large pumpkin chocolate chip cookies with walnuts

Are you as much a fan of pumpkin like me? Or maybe you are not convinced of its versatile usage yet? Either way, this recipe will surely make you love pumpkin (more)! There are so many ways to consume this veggie and even for a sweet snack you can’t go wrong with it. So if you want to enjoy the health benefits of pumpkin in a sweet way, bake yourself a batch of healthy large pumpkin chocolate chip cookies with walnuts!

Though we may not feel ready for it yet, fall has officially made its entrance again. I personally always need some time to adjust to the colder weather again, not knowing how to dress properly to the changing temperatures (one day I’m dressed too cold, next day too warm…). However, fall does bring cozy feelings with the beautifully colored leafs all around, warmth from candles burning at home, and movie nights with hot chocolate milk. And pumpkin of course is significant for this season, so I really wanted to use this for a new recipe this month. These large pumpkin chocolate chip cookies with walnuts are so delicious you won’t even mind the changed season 😉

INGREDIENTS

– 200 g almond flour
– 200 g pumpkin
– 100 g dark chocolate
– 1 egg
– 2 tbsp. melted coconut oil
– 1 tsp. baking powder
– 3 tbsp. maple syrup
– 2 tsp. vanilla extract
– 1 handful of walnuts

  • Energy: 550 kcal
  • Protein: 14,6 g
  • Carbs: 31,2 g
  • Fat: 43,3 g
  • Fiber: 8,7 g

METHOD

  1. Preheat the oven to 180 degrees Celsius.
  2. Cut the pumpkin roughly into pieces and cook for 10 minutes. Then drain the pumpkin, let cool down for a moment and put everything in a blender or kitchen machine.
  3. Add the almond flour, egg, melted coconut oil, baking powder, maple syrup and vanilla extract to the pumpkin and mix to a whole with the blender.
  4. Chop the dark chocolate and walnuts into smaller pieces and add to your mixture. Stir it in with a spoon (not with the blender!) and your pumpkin walnut chocolate chip cookie mixture is ready.
  5. Cover a baking plate with a sheet of baking paper and use 2 large tablespoons of the mixture per cookie. Lay the mixture directly on the baking plate and use the spoon to give it a round shape, making all cookies about 1 cm thick.
  6. Do you like chewy cookies? Then place the cookies in the oven for 15 minutes. For more crunchy cookies set your timer to 20 minutes.
